Dear aunty yochana,

I am getting ready to make a birthday cake this weekend.This person lovessssss cheesecake. I love the way you made that chessboard cheesecake and I would like to do something like that. I have bought pans and insert for making chessboard cake but not to sure how to do this. I will like to have sponge cake in it together with cheesecake like you have it on one of your posts. Can you please let me know how to do this.Do I fill pan with both cheesecake filling and cake mix, and bake it together or what? If you could help me with this I would greatly appreciate it. Again this cake is for saturday so please help I am desparate. Also what filling do you put on your cakes to make them this smooth? It looks like heavy cream but it looks to nice to be it. Hi eileen,

I bake 2 layers of sponge cake and cut into 4 rings and then place it back onto the board alternating with fruit filling mousse...

I used star brand food colouring...only the red and lemon yellow and the rest are natural.

Hi Aunty Yochana,

This cake is different method (of baking) as compare with Checkerboard Fantasy Cake that u baked on the 2nd July, rite?

For the cheese/mousse cake, u baked the sponge 1st, cut with cake rings, then assembled n filled out the gaps with cheese fillings? After that, just chilled the cake, that is the cheesecake is "no-baked" type?

For the Checkerboard Fantasy Cake, U used the "special cake ring"? Do we need to gease the cake ring? When we lifted up the ring, the cake tends to smear into each other, i won't get sure nice "cut"! Please advise how u do this? Thanks.

Hi Nool,

Yes you are right.

For the special cake ring, make sure your batter is not too flowy. It will merge with each other and make a mess out of it. Mine wasn't perfect though. I used a soft type of butter cake recipe and if I use the normal butter cake recipe it should stand out better..

For the colourful mousse cake, use I used cake rings to cake it and fill up the hollow gaps with mousse. Then top up with sponge cakes , this time it must go on top of the mousse and then fill up the gaps again. Repeat till finish, making it look like a brick wall.
