Matcha Green Tea & Raspberry Tart

Recipe supposed to use red currants but not in season at the moment..should be around Christmas time so replaced it with raspberries instead. Wanted to use cranberries but it's too sour.

May I ask you a question relating to the 'durian chiffon cake'? ie
Can i use 'fresh milk' instead of 'coconut milk"? Your advice is appreciated! Also, wishing you a very happy mother's day!
