Maltesers Muffins



Ingredients:

130 gm. cake flour
1/2 tsp. baking powder
1/4 tsp. Bicarbonate of soda
60 gm. butter
110 gm. sugar
60 gm. dark chocolate - melted
2 large eggs (70 gm. each with shell)
a pinch of salt
120 ml. fresh milk or buttermilk
1/2 tsp. of vanilla essence
1 cup of maltesers

Method:

(1) Line muffin pan with paper cups.
(2) Sift cake flour with baking powder and bicarbonate of soda.
(3) Cream butter and sugar until light.
(4) Add in melted chocolate and eggs.
(5) Fold in sifted flour and salt alternately with milk.
(6) Fold in maltesers lightly and scoop mixture into prepared paper cups.
(7) Bake at 175C for about 25 mins.

Hi Yochana,
Recently I'm into muffins but just can't get it right. Texture always turn out to be gummy and sticks to teeth. Really frustrating as I don't know what went wrong. What's the texture of your maltesers muffins? What is maltesers?

Wendy,

Don't overmix your batter when you make muffins. Just lightly stir will do even if it's lumpy it's o.k. When it bakes, it will combine on it's own.

You can see a pkt of maltesers at my muffin's background.

are we supposed to pour the batter 3/4 for muffins??

Hi anonymous,

it all depends. If you like a higher dome, scoop more than 3/4 and if you want to the rim only, then pour 3/4.

you can add in the vanilla essence when you are creaming the butter with sugar.

Just wanted to let you know that I baked the muffins over the weekend... and it was a great success! :) I love the texture of the muffin, and boys love it too... although they are digging into it to look for the maltesers :P
