Chocolate Melting Moments



Madeleines


Ingredients: CHOCOLATE MELTING MOMENTS

125 gm. Butter - softened
2 Tbsp. icing sugar
120 gm. plain flour
2 Tbsp. Cornflour
1 Tbsp. cocoa powder
85 gm. Nutella spread

Method:

(1) Cream butter and icing sugar till light and fluffy.
(2) Add in dry ingredients an mix till a soft dough is formed.
(3) Spoon mixture into piping bag fitted with a star nozzle and pipe out onto a tray.
(4) Bake at 170C for about 15 mins. or till cooked. Cool on trays.
(5) Sandwich cookies with Nutella spread.

Hi anonymous,

nutella spread is a hazelnut spread which you can buy from supermarket or provision shops. We normally buy it for spreading onto our bread.

Would you be kind enough to tell what other size nozzle is essential in doing frosting.

I've been looking for a good melt in your mouth type of butter cookie that uses piping. Do you think I can omit the cocoa powder and it will taste like those old fashioned butter cookies? Appreciate any advice you may have. Thanks in advance :-)

Melt-in the mouth butter cookies? Something like sugee? Butter cookies are normally on the crispy side.

Pai seh, yah, you're right, I'm looking for the crispy and light type. Texture is lighter than shortbread...You know, those type typically eaten during CNY a long time ago. I used to have a good recipe which requires piping from a bag (not those roll n cut type) and I lost it. Do you think your chocolate melting moments will work without the cocoa powder?

hi,
could you pls help me out. i tried a recipe similar to this ( 50 gms butter, 50 gms sugar, 60 gms cornflour, 1/4 tso baking powder), piped it neatly on a tray and baked it. but to my dismay the cookies melted completely and everything went flat on the tray. it looked like a cardboard on a tray.could you pls tell me what could have gone wrong? i am eager to make crisp cookies using nozzles but don't know what to do. help!!

it could due to your creaming problem and oven got be another factor to your failure.

The recipe has no problem at all.

Hi Aunty, I chanced upon your blog in a forum and tried out the Chocolate Melting Moments together with my sister.

In the recipe, it stated
2 Tbsp. icing sugar
1 Tbsp. cocoa powder

and we estimated the portion in grams. The cookies turned out to be a bit too chocolaty. Can you tell me how much are those in grams?

I tried making the chocolate melting moments, but I couldn't pipe out the cookies. The dough was a soft dough, but still too hard to pipe them.

What can I do to solve this problem?
