Wow Lucy! These look so cheery.. certainly brighten me up :) bet they taste yummy too..

Can i ask the shorbread dough easy to handle and if they turn soft after cooling? cos i tried making once shortbread before and they turn soft very fast after they cooled.. TIA!

normally shortbread dough is very soft. Leave in the fridge before rolling and cutting out with cookie cutter. Add in extra flour and knead a little before rolling otherwise it will turn soft very fast.
