Chocolate Chip & Walnut Cookies





Ingredients:

250 gm. Butter
1 tsp. vanilla essence
125 gm. castor sugar
125 gm. brown sugar
1 egg
320 gm. plain flour
1 tsp. bicarbonate of soda
200 gm. chocolate chips
100 gm. chopped walnuts - coarsely chopped

Method:

(1) Beat butter, vanilla essence, sugar and egg with electric mixer until smooth.
(2) Add in flour and bicarbonate of soda and stir in chocolate chips and chopped walnuts.
(3) Drop level tablespoon of mixture onto trays and bake at 180C for 15 mins. or till golden brown.
(4) Cool on wire rack before storing in cookie containers.

You weigh each dough to your desire and roll it round then press a little on top.

Just to confirm is the plain flour 320g? If just to try out, can I half all the ingredients? Do I have to use half an egg? Can I use self raising flour instead of plain flour? Thank you.

Won't chao da lah...just use 170C for about 15 mins., top and bottom heat together.

use convectional oven - Ariston. Call Mayer Marketing. They have many models.

haha, omg. i tried but it turns out very brown, esp the bottom(it's dark brown). I put them in middle tray with top and bottom heat. why like that. so saddening T.T hope you can help.

Another wonderful recipe....though I find it a tad too sweet. Next try will reduce the sugar and that would be perfect. Thanks for a great crispy recipe.

Your recipes are so good that my 10 and 12 year old did it on their own and it tasted wonderful as well. Since this is the 2nd time round trying this recipe, I cut down the sugar and it was perfect.

Hi Aunty Yochana,

This is going to be my first attempt at cookies. Just to confirm with u a few things before I begin my experiment:

(1) Is the "tray" that comes with my new oven the same as cookie sheet? =/ cos it looks the same to me...help!

(2) Must I use the parchment paper to bake these lovely cookies? Or can I just grease the pan by brushing it with butter/olive oil? =/ *cry* I'm really zero in this!

Sorry aunty for asking so many Qs, I hope this time around it'll be successful and not just plain edible...Thanks in advance!

Better put a piece of greaseproof paper or parchment paper to prevent it from sticking to the tray.

Its a table top oven (Cornell). And I use the tray that comes with the oven and line it with a layer of parchment paper for baking these cookies.

Can i know for all your cookies recipes, do we need to soften the butter and let it cool before use? or we can use the butter straight from the fridge?? What is the difference texture of the cookies? Sorry to ask so many ques...just hope to bake great cookies for my loved ones...=)

I prefer to use cold butter for my cookies but then again, it all depends on what cookies I'm making. If I need to wrap, I use soften butter.

It's me again!+D Just want to let you know that my 2nd attempt was successful!

I lower the temperature to 160C for 15min and this time, I use a proper baking sheet lined with parchment paper. No burnt bottoms, just perfect cookies! It was all gone the next day! hahaha...

Since I'm using my new Cornell tabletop oven which I think the temperature is slightly higher so I lower the temperature to 160C for 15min and this time, I use a proper baking sheet lined with parchment paper. No burnt bottoms, just perfect cookies! It was all gone the next day! hahaha...

I tried this recipe with macadamia nuts and another time with pecans, and the kids and I simply love the crispy and yummy results.

And finally, I don't have the 'flat choc chip cookie' problem with this recipe.

Just add in 100 gm. will do.

If you don't have a sweet tooth, 80 gm. will do.

Thanks for the fast reply, i got another question is can i use all chocolate chips and omit the chopped walnuts as my dad can't eat walnuts. How much chocolate chips should i add in total to omit the walnuts?

I half-ed this recipe and store it in the fridge after mixing everything but when i 'thawed' and bake it, they became very very flat cookies and very dark brown. I have reduced the time to 8min instead but the cookies are still very flat. Could you advise what went wrong?

I'm a new fan of yours.
Just wanted to tell you that my family had enjoyed this recipe. My 1 year old baby, who's not even 13 months yet, had been 'asking' and eating this cookie for the past few days now. He also prefers the lattice pineapple tart pastry that i made with your recipe, to other off-the-shelf pineapple tarts.

Just like to thank you so much for sharing your recipes. I've enjoyed marvelling at your recent creative bakes. I even recognised a recent bake for my friends' 25th wedding anniversary! what a small world!

I've became ur fans since I've successfully made biskut makmur using ur simple recipe. I would like to ask can I use coarse sugar instead of brown n castor? Can u convert to me as well in 'cup' @ 'tbs' measurement instead of 'grams' coz I don't have kitchen scale.
