Apricot Brandy Cheesecake




Biscuit base:

120 gm. plain biscuits - blend till fine
60 gm. melted butter

500 gm. cream cheese
2 tsp. finely grated orange rind
110 gm. sugar
2 eggs
1 Tbsp. apricot brandy (optional)

glaze:
200 gm. Apricot Jam mix with 2 Tbsp. apricot brandy

Method:

(1) Blend bisuits until fine. Add in melted butter and mix thoroughly. Press into paper cups and let it set in the refrigerator for 30 mins. till harden.
(2) Cream cheese with sugar and orange rind till creamy.
(3) Add in eggs one at a time beating well after each addition.
(4) Add in apricot brandy and mix well.
(5) Spoon mixture into prepared paper cups and steam bake in oven for 30 mins. or till cheese is set. Cool.
(6) Pour apricot glaze on top of cheesecake and refrigerate till glaze is set.
(7) Serve chilled.

u r such a talented & not selfish lady who shares yr recipes to the viewers. i would like to share whatever baking i come across to the viewers but after i tried to bake,there wasn't any success. so can i share them with u then u can share them with the viewers after u tried them?

Hi Aunty Yochana, thanks for all the wonderful receipe. I have tried baking some of the receipes, but they always turn out failure. They are either too dense or too "ugly" Sigh. Seem that I'm not suitable to be in the kitchen. hee hee. I think my hubby supports that. Pity him at times cos he is my dumping bin.

Nevertheless, I still want to try. Do you soak the apricot in brandy or mix the brandy into the cheese cream mixture and how much is the portion? This is the chilled version right? Or can you post the receipe?
