Green Tea Mousse Cake




Ingredients for green tea sponge cake:

4 egg yolks
45 gm. castor sugar
4 egg white
50 gm. castor sugar
30 gm. water
50 gm. corn oil
90 gm. cake flour
5 gm. or 1 tsp. green tea powder

Green Tea Mousse Filling:

4 egg yolks
75 gm. castor sugar
150 gm. fresh milk
8 gm. green tea powder
300 gm. whipped cream
10 gm. gelatine powder + 45 ml. water (soak together then microwave for about 25 secs.)

Method:

(1) For green tea sponge cake: Mix egg yolks, sugar, water and cornoil together and stir till mixture is smooth.
(2) Add in flour and green tea powder and mix evenly.
(3) Whisk egg white with sugar till stiff peak. Fold in egg yolk mixture and pour mixture into a 9" square tin.
(4) Bake at 170C for about 30 mins. or till skewer inserted comes out clean.
(5) Leave cake to cool on wire rack and slice cake into 2 slices. Place 1 slice of cake into a 9" square cake ring.
(6) Mousse: Heat milk till warm, then add in castor sugar and green powder. Stir till evenly mixed. Fold in egg yolks and stir. Becareful not to allow the egg yolk to overcook and it will become lumpy.
(7) Add in melted gelatine mixture and leave to cool.
(8) Fold in whipped cream gently.
(9) Pour half of the mousse filling onto the prepared cake ring and then top up with the other slice of green tea sponge cake.
(10) Pour balance mousse on top and level it evenly. Refrigerate till mousse is set.
(11) Take out the cake from the cake ring and sieve green tea powder on top and decorate as desired.

HI eileen,

the brown piece is a layer of chocolate sponge cake. You can either use 1 slice chocolate sponge and 1 green sponge cake or use both chocolate sponge or green tea sponge. I used both to enhance the look...

There's no typo error, 45 gm. goes with egg yoks while the 50 gm. goes with egg white.

I just asked about using green tea leaves instead. I could not resist the temptation and bake using the leave. My feedback is the cake (I did only sponge) is very tasty. But using tea leave does not seem like a good idea, the green tea flavor does not seem very intense.

Sorry I didn't know you're in London.

Blending the tea leaves is no good. Firstly it's coarse and there's no green tea aroma or gives the cake the green tea colour. Try to get elsewhere.

All all your mousse recipes, does the whipping cream need to be whipped to stiff peak before adding to the mousse mixture?Does it matter whether we use dairy or non-dairy whipping cream? Thank you!

HI blua,

If you use non-dairy whip cream, the volume is almost double of dairy cream but dairy cream is more delicious. I must warn you that dairy cream must not overbeat otherwise it will separate. Non-dairy whip cream is easier to handle. It's up to individual taste and both cream need not beat till very stiff. Stiff peak is harder to fold.

I have a question though, can I substitute the fresh milk with UHT milk ?I am asking because I don't drink fresh milk and so the remaining will usually go to waste.

A cake ring is just a round or square ring, hollow in the middle like the ring on your finger except that they are bigger.

I wanted to try this recipe. Would like to ask: for the whipped cream, what should be the consistency? when we make the nousse, do we remove from fire when putting in the egg? How hot should the milk be in order not to cook the egg?

Hi anonymous,

For whipped cream, whip till it doesn't drop from the whisk but do not overbeat because it will become very dry and it's very hard to fold with the other ingredients.

Yes, remove from fire with putting in the egg. Whisk vigorously to avoid overcooking the egg yolks, causing it to be very coarse in texture. Pour in the hot milk and whisk vigourously at the same time. As soon as you see bubbles about to appear at the side of the boiling milk, then it's ready to be poured into the milk.

You can add in some red beans into the sponge cake. no problem. It will definitely sink cos of the weight but it will not be too bad.

I baked this yesterday, it's yummy! I'm not sure if I acheived the right height as I find that my cake didn't rise much! Is it normal for sponge cake?Fyi, I used 9" round tin. I'm thinkg of baking 2 more layers in choc, is it appropriate? Do I need to make more cream to spread?how much more? Thks for helping!

Hi Leen,

if your cake is bigger, you will need more cream to cream the whole cake. If you sponge cake is low but fluffy then it's ok if your sponge cake is insufficient, you can make another layer.

Hi...I tried this recipe today but my cake didnt seem to turn out right. It's not green...and it tastes like regular sponge cake. I'm pretty sure I followed the right amounts and my friend double-checked while helping me make it as well. Also don't think its a problem with my green tea powder. I bought it from Japan and it makes delicious green tea. Anyone have any ideas what happened to my cake?

I tried using phoon huat's green tea powder...the taste of the green tea is not strong and when i dust the cake using the powder it taste bitter...is the green tea powder from phoon huat taste different from those sold at supermarkets which are for making tea?

Can i substitute gelatine powder with gelatine sheet ? What are the measurement and procedures ? Do i need to add boiling water or i can just soak it in cold water?
