Fermented Red Bean Curd Biscuits



Ingredients:

250 gm. Butter
150 gm. icing sugar
1 egg
1 Tbsp. pounded shallots
1 Tbsp. pounded garlic
1 piece fermented red bean curd (nam yee) - mashed
400 gm. Plain flour
1 tsp. Bicarbonate of Soda
1 tsp. Baking Powder
1 tsp. five-spice powder
50 gm. white sesame seeds - roasted
Some halved cashew nuts

Method:

(1) Beat butter and sugr until creamy. Add in egg and mix well. Add in remaining ingredients and mix into a dough.
(2) Chill the dough for 30 mins. Remove and roll inot 3 mm. thick. Cut into rounds and place onto a baking tray.
(3) Glaze with egg and place halved cashew nut on top of cookie.
(4) Bake at 175C for about 15 to 20 mins. or till lightly brown.

Using Nam Yu for cookies sounds very interesting as I have only used it for vegetable stew and braised pig trotters.
