Hi michelle,

I don't own a shop...I'm just a housewife making cakes to pass my time. It's my passion...

something not right with the sponge cake recipe or is it me? My sponge cake for the lime mousse cake does not rise, very flat indeed. 180g eggs is equal to how many eggs? I measure and so I used 3 eggs.

Hi Honeylemon.

This cake's recipe is not wrong. It's correct. If you are new to baking, use 150 gm. eggs instead of 180 gm. You have to learn how to lightly fold the flour and butter and once you deflate the eggs, it will definitely be flat.
