Chocolate Chips Cream Cheese Muffins



Ingredients:80 gm. Sugar
2 large eggs

Sifted Together:180 gm. cake flour
1 tsp. baking powder
1/4 tsp. salt

60 gm. fresh milk
70 gm. melted butter

Mix all the fillings together:

100 gm. Cream cheese - softened
1 1/2 Tbsp. caster sugar

Some chocolate chips for sprinkling

Method:

(1) Whisk eggs and caster sugar till light and fluffy.
(2) Add in fresh milk and melted butter into whisked eggs and lightly mix it.
(3) Pour in sifted flour ingredients and mix till well mixed.
(4) Pour batter into paper cups and then scoop a teaspoon of cream cheese mixture on top and then sprinkle top with some chocolate chips.
(5) Bake at 180C for about 20 min.s or till golden brown.
(6) Remove from oven and cool on wire rack.

Hi Yochana,

Just tried this recipe, the taste is very good.
Can you tell me how much to fill in the muffin cup, to be able to get what's in your photo?

Tried filling slightly more than half, it did not cover the whole muffin cup.

How about the cream cheese? Is it supposed to be slightly 'exposed' on top or should it be totally 'submerged' into the muffin?

Hi angeline,

Pouring batter into the cups depends on what height you're trying to achieve. If you want to follow mine that is in the photo, spoon batter into your cups till half, then put a teaspoon of cream cheese filling then cover the top till it reaches about 3/4 of the height of your muffin pan..not the cup. Don't worry if it stick to the side of the pan (that is if your paper cup is too small). It's easy to take out.

Cream cheese is supposed to be hidden inside and not exposed.

Then sprinkle some chocolate chips on top before baking.

I m thinking of making this for Children's Day, as i have some durian mousse leftover, i m wondering whether i can subsitute the cream cheese portion with durian mousse??

Last week i have made the Chocolate chip muffin(the rubbing in method one), it is simple to make n nice to eat.

Hi Celia,

that's a good idea but please cook the durian with some sugar for a while over the stove, let it cool and then use it as fillings. This will help prevent the durian in the muffins from turning sour. BTW, mousse?? it's already with cream, do cook to thicken it.

Mmmm....seems like I'm going to try this too.

Hi Aunty Yochana,

Would love to try this recipes but i have some questions: -

1) Can i beat the eggs & caster sugar using hand mixer? does it make any different?
2)Does the word mix means mixing the ingredients using spatula?
3) For the filling, do i need to beat the cream cheese & caster sugar to mix it?

Hi Nur,


For this muffins, yes you can use a hand mixer because the amount of eggs used is low.

Yes, mix it with spatula.

For cream cheese and sugar, use a wooden to stir till it's evenly mixed and able to scoop into the muffns.

Don't worry, your qns are not that silly...it's normal for a newbie.

I've tried baking this but it turns out very hard.. ;(
I don't know where did i do wrong.. Is it during the beating of eggs & sugar? i am really sad.. but don't get me wrong.. i did not blame ur recipe but it is me.. can u give me some tips.. of do & don't while baking muffins like this.. i really want to learn from u.. u're my inspiration.. Please help me.. Thanks alot..

Hi Nur,

This muffin is very easy to do. If I'm not mistaken, you probably could have overmixed the batter. Fold lightly, using a spatula.

thanks for your advice.. sorry to trouble you but i have just 2 more questions..
1) normally how long to beat the eggs & caster sugar by hand mixer to get light & fluffy? (yesterday i beat for abt 15mins.. wondering if that can cause the muffin to be hard)
2) as i don't have large egg, how many eggs should i subsitute for smaller egg?
would really appreciate to hear from you soon cause i will be baking this muffin again till i success..

Hi Nur,

Just whisk the eggs and sugar till it doubles in volume and then you add the rest of the liquid. Fold in the dry ingredients as light as possible, taking care not to overmix as it will cause the muffins to became hard.

1 egg = 60 gm.

Whenever 'melted' butter is mentioned, does it mean I hv to melt butter slightly over stove, or via microwave oven ?

sorry, got to ask a silly question.

when you mentioned that the cream cheese mixture is supposed to be on top, and it should be hidden, do you mean that once the cream cheese is on top, it will be "flow" into the mixture?

i thought the cream cheese will be on top of the muffin instead of hidden inside?

Hi Joyce,

Scoop some batter into the papercup, then as teaspoon of cream cheese and then top up with some batter again. For the top, you can sprinkle chocs or nuts.

From the above, you will notice that the cream cheese will definitely be hidden because you scoop some batter on top of it.

Hi Joyce,

yes you can use plain flour instead of cake flour.. Cake flour is finer tho but makes not much difference to the cakes.

but if making chiffon cake, will using cake flour and using plain flour make a difference?

i've tried using cake flour and plain flour for making chiffon cake, and i feel that cake flour will give a fluffy texture as compared with plain flour (but i'm not sure if it was because of the technique i use in beating the egg white, that makes the cake fluffy or dense).

Thank you soo much for all your wonderful recipes. This muffin recipe was the first one I've tried out (though I've been reading your blogs for almost 7 months now..) but I was not confident enough to be able to make it up to your standard so I never really tried...and it turned out AWESOME!

Thought I've misread the recipe (silly me as usual) and mixed the cheese into the muffin mixture, it still works well! so I did a variation and made Green Tea and Choc Chip muffins too!

Here is a photos of what's left of a 2 dozen muffin (after my friends ate the rest at one go...they were shocked at how nice it was)

I juz try out yr receipe 4 tis..
My muffin looks ugly n white..
Nt so golden brown like yrs..
Do u knw y is it so??
N the ingredients is it juz enuough for 11 cups??
Cs i juz manage 2 make 11cups n left a lot of cream cheese mix..
So i juz put it on top but it turn out ugly..
So sad..
I tought it would melt but i doesnt..
Pls guide me..
