Red dragonfruit agar agar mooncake

This is the chwee kueh mould for making the fillings.





This recipe yields 6 nos. of red dragonfruit agar agar mooncake

Ingredients for filling:

120 ml. Water
1 1/2 tsp. agar agar powder
50 gm. sugar
100 gm. blended dragonfruit flesh
100 gm. fresh milk
1 Tbsp. condense milk

Ingredients for Skin:

2 tsp. agar agar powder
500 ml. water
90 to 100 gm. sugar
100 ml. red dragon fruit puree

Method:

(1) Cook sugar, agar agar powder and water till agar agar dissolves.
(2) Add in dragon fruit puree and fresh milk.
(3) Pour into small chwee kueh mould. Let it set.
(4) Cook the agar powder, water and sugar until boiling point.
(5) Add in red dragon fruit puree.
(6) Pour some skin agar agar into the mooncake mould and when it's half set, put in the fillings and then pour the skin agar agar to fill up the mould.
(7) Let it set in the refrigerator and then release it.
(8) Serve chilled.

what's the difference between blended dragonfruit flesh and dragon fruit puree? are they the same?

Hi Claire,

anything blended is called a puree , so they are the same.

yochana, you said that anything blended is puree, so if a recipe requires strawberry puree, does it mean i just need to blend the fresh strawberries? do i add water to blend and do i need to cook them over the fire? Sorry if you find me nuisance. But I have been putting off making this cake that requires the puree. thanks alot.

Hi anonymous,

Yes just blend the strawberries but i will encourage you to warm it up and add in a little sugar to preserve it. it's also better for the cake so that it won't be so acidic.

hi,
i allergy with fresh milk, can i subtitle coconut milk?. when you cook skin jelly and you put into the mold first and leave it there and put filling after that, i do not understand ,can you show me please. thank you.

Hi,

Yes you can sub with coconut milk if you allergic to fresh milk.

Next time when i have a agar agar mooncake class, you come and I'll show you.
