Nutritious Cake




Ingredients:

40 gm. corn oil
60 ml. fresh milk
100 gm. Hong Kong flour
40 gm. egg white
200 gm. egg white
75 gm. sugar
1 Tbsp. Wolfberries (Kei Chee)
12 nos. red dates - pitted and finely chopped
1 Tbsp. Faxseeds
1 Tbsp. Pumpkin seeds
1 Tbsp. Sunflower seeds
1 Tbsp. cooking oats

Method:

(1) Soak red dates and wolfberries in water for about 5 mins and drain.
(2) Heat corn oil and milk in a pan. Do not come to boiling point. Slightly more than warm will do.
(3) Add in flour and the 40 gm. egg white and stir until smooth.
(4) Add in red dates, wolfberries, falxseeds, sunflower seeds , pumpkins and oats. Mix into a smooth batter.
(5) Whisk egg whites and sugar until soft peaks and fold into the flour mixture and fold gently.
(6) Pour into a greased 7" sq. tin lined with baking paper.
(7) Bake at 180C for about 30 to 40 mins or until cooked.

Hi Aunty

I note in your recipe you have stated egg white twice - one 40 gm
& the other 200g. Is it 40gm egg yolk and 200g egg white? Pls advise.

Tnere is no mistake in the recipe. This recipe does not contain egg yolks. Read the method and you'll understand. Happy trying and any problem, do consult me again.

Dear Aunty Yochana
My mother recently ate a walnut cake that she really liked, and the texture of it looked a little like this cake, except that it was lightly buttery. I would like to make something like it for her birthday.. Can I substitute the 40g of oil in this recipe with 40g melted butter? Please help me! Thank you so much! And I am not sure how to fold egg whites into the batter because everytime I try to do this the cake doesn't turn out right :(

HI anonymous,

this cake is not so buttery. In fact using only egg white and with corn oil, it doesn't have the normal fine textured butter cake. This cake is more springy instead.

To fold egg whie , use either your palms or a spatula to do the job. Fold from the bottom to the top.

Hi Nina,

Hong Kong is superfine and it's used for making pao.

You can use all-purpose flour.

Hi Yochana,

I tried but the cake did not rise & not springy. What is soft peak? I whisk egg white than add sugar. After folding the egg white to the flour mixture, I stired but all the nuts sank at the botton layer of the cake. If I want to bake a bigger cake do I need to bake longer than 30 - 40 mins at 180C?

Hi anonymous,

For this cake, it uses egg white only and it's important that you take care not to overmix the mixture otherwise all the nuts will sink to the bottom. You definitely have to increase your baking time if you want to make any bigger cake.

I tried this cake but my cake was not springy. I used microwave oven, convention bake because I do not have an oven.
What is soft peak? Do we whisk egg white together with sugar or add sugar later? Can we use hand egg beater to whisk egg white?
Pls advise. Thanks

Hi anonymous,

Egg white must whisk together with sugar. It's easier to use an electric beater but if you want to use hand whisk, you have to whisk it properly otherwise it will not be light and fluffy.

Thanks for your quick advise. Can we use microwave oven, convention bake because I do not have an electric oven to bake cakes? Is the pair of electric cake mixers use for creaming butter & sugar,use
for whisking the egg white & sugar?

I've never tried using microwave oven to bake so I cannot comment on it. Some of my friends told me that it's o.k. and some said it's not o.k. , so I'm at a lost.

Thanks for your reply. Do all bake cakes need top & bottom fire because microwave oven, convention bake do not have bottom fire. I could bake pineapple tarts & cookies. Don't know why my cake was not springy & did not rise up. Pls. advise.
