New York Cheesecake




New York Sweet Crust:

125 gm. plain flour
50 gm. butter
1/4 tsp. baking powder
50 gm. sugar
1 no. small egg

Ingredients for filling:

600 gm. Cream cheese - room temperature
120 gm. Sugar
30 gm. plain flour
4 nos. medium size eggs
125 gm. sour cream
1 Tbsp. Lemon zest
1 tsp. Vanilla essence

apricot gel: 2 Tbsp. apricot jam + 80 to 100 gm. water + 1/2 tsp. agar agar powder + 1/2 tsp. instant jelly

Method:

(1) For crust: cream butter and sugar till creamy. Add in egg a little at a time till evenly mixed. Add in flour and baking powder and mix into a dough. Rest for about 20 mins. Then roll out the dough and lay into a 9" springform tin. Bake at 175C for about 15 mins. then remove from oven and let it cool.

(2) Beat cream cheese with sugar till creamy. Add in lemon zest and vanilla essence.
(3) Add eggs, 1 at a time until finished.
(4) Add in plain flour and then pour in the sour cream and mix.
(5) Pour the cream cheese filling into the baked crust and steam bake for about 1 hour 10 mins. or until center is almost set.
(6) Leave in the oven for about 30 mins (oven switched off) and then remove from oven or you can leave it inside till cooled.
(7) Chill in the fridge and glaze the cheese cake with apricot gel.
(8) Serve chilled.

made this cake as a birthday cake for hubby. substitute sour cream with yoghurt and use digestive biscuit as base. was very delicious. thanks for such a good recipe!

Hi bian bian,

I'm also using an Ariston oven for my cheesecake. Remember to use baine marie (a tray of water). Turn to top and bottom heat. I think it's like an equal sign. Use 160C.

Do i use warm or cold water? after this I should be ready for my 1st trial steambake. Just love to be able to bake New York Cheesecake.

if you use hot water then your oven will get heated up faster but if you don't have hot water, you switch on your oven earlier and put in the water for it to get hot.

steam bake is baking cake in a pan of water like double boiler in an oven. Cannot steam over stove.

With the amount of fillings, you shouldn't be having such a low cheesecake. I'm also wondering why yours is so low if you said that the height is half of mine.

Thank you for posting such a delicious cheesecake recipe.

i baked the cake last weekend and it looked good until towards the end of the baking time - the cake cracked. Any idea why the cake cracked?

The cake looks brown at the side of the cake. Unlike yours - it is cream colour.

Did you steam bake your cheese cake. Steam bake means that you have to put your cheesecake pan into a tray of water while baking.

Hope you don't mind if i ask regarding the height of the hot water in the tray. Is the height of the water similar to the height of the cheesecake? Or just some hot water in the tray?

ht of water is about 1/3 the ht of the tray. Make sure water doesn't seep into your spring form tin. Best to wrap up the tin with aluminium foil.

4 cm is quite normal for a cheesecake. I used Philidelphia cream cheese.

this apricot gel is for brushing only. You can omit it or just use any jam to brush it to get it a shine.

You can create your own cheesecake with swirls on top. Baine marie is a must for this cheesecake.

aunty yo, i baked this today, and when i transferred it into the cake tin, the 1/4 of my biscuit base fell out!! :(
and my biscuit base is as thick as my cheesecake even tho i reduce to 80% of recipe to fit my springform. :(
haven't taste it yet, but it looks funky. :(

Hi Elaine,

Oh...no way that the base is as thick as the cream cheese.

The base only uses 125 gm. plain flour and it's a thin base not thick.

For the cream cheese, I used 600 gm. cream cheese.

From the above, you will know that it's not possible to be the same thickness.

The base will not so dry as you have mentioned. It has butter and eggs and they bind together very well. Shouldn't break.

You have to analyse yourself to see where you went wrong. The recipe has no mistake at all.

hello aunty yo!
i used the strawberry swirl base and reduced it by 80%. after cutting the cake, i realise the middle portion is not as thick, but the sides, i guess i didn't press down evenly look as thick as the cheese cake.

when i lifted it up, it kinda broke. i think i dont know how to lift the cake up properly and put it into a cake tin. any suggestions for that?

Try chilling it first before transferring or just let it in the freezer till it's hard. It will set and won't break.

I didn't apply any topping on this cheesecake. The only I had are the rosettes which I piped using Non-dairy whipped cream.

i have tried the recipe n it turn out well... however, i bake it using mircrowave conventional oven...

if i use the normal oven wif top n bottom heat... for the steambake of the cheesecake... which layers do you suggest that i put the cake to bake...??

normal oven gt 3 layers tat we can put the mental tray... should i put it near the top or bottom or remain at the middle...

I've previously tried making Jelly hearts and it's very yummy! Now,
I want to try making New York cheesecake and Strawberry Swirl Cheesecake but I'm a bit confused with Steam bake and Baine Marie. Is there a difference? Does it matter if the tin (cheesecake) is in the tray of water or above the tray of water?

Also, for the Strawberry Swirl cheesecake, do I have to steam bake it too?

i had tried baking the cake today, but the top seem to crake a line. may i know why is this happening?

i had place the cheesecake in the tray of hot water, and placed both in oven to bake.

A fine hair like crevice is quite normal for a cheesecake.

Try keeping your ingredients in room temperature.
